Honey Cake
1-1/4 cups honey
4 cups self-rising flour
1 cup oil
1 heaping tsp. cinnamon
2 tsp. instant coffee dissolved in 1 tsp. mixed spice
1/4 pint (1/2 cup = 2 Tbsp. water
1 level tsp. ginger
1-1/4 cup dark brown sugar
1 tsp. baking soda
4 eggs


Directions
Beat together honey, oil, coffee and sugar. Beat in eggs. Beat in the rest of the ingredients sifted together. Bake in a greased, shallow tin 12 X 10 X 3 inches in the oven at 325 degrees for 60-75 minutes.

Low Fat Honey Cake
2 eggs, separated
1/2 tsp. salt
3/4 cup honey
1/2 tsp. cinnamon
1 cup sugar
1/2 tsp. allspice
3 cups flour
1 cup black coffee
1 tsp. baking powder
1/2 cup chopped slivered almonds (optional)
1 tsp. baking soda


Directions
Mix sugar and honey together in large bowl. Add egg yolks one at a time. Sift dry ingredients and spices together. Add alternately with black coffee, mix until combined. Beat egg whites with a pinch of salt until stiff, but not dry. Fold into batter with a rubber spatula. Pour into two greased and floured loaf pans, sprinkle with slivered almonds, if desired. Bake in thecenter of a pre-heated 350 degree oven for 35-40 minutes, or until cake springs back when lightly touched. Cool on a rack, wrap in plastic and keep in refrigerator until serving.
